Urban Neighborhood Dining at Carson Kitchen

Specializing in creative American cuisine and thoughtfully crafted cocktails, Carson Kitchen is built on a philosophy of reimagined comfort food prepared with approachable fine-dining ingredients.

My goal for Carson Kitchen was to create a place where you can come in once a week with your friends to hang out and try some new things,” said owner Cory Harwell. “Carson Kitchen isn’t just for celebrating your anniversary with a $100 bottle of wine. It’s also for celebrating Tuesday.”

The restaurant concept originated in 2014, opening in the historic Fremont East district of Downtown Las Vegas, a partnership between chef and restaurateur Cory Harwell and his dear friend, the late Chef Kerry Simon. Designed to bring a carefully curated experience to our country’s unique & vibrant neighborhoods, Carson Kitchen features a contemporary bar and open kitchen expo counter in an industrial yet inviting architecture.

Previously, Harwell flew through Salt Lake City a couple of times but had never really spent any time here, other than in the airport. On one trip, his flight was canceled, he spent an extra night in the city, got a hotel room, and ventured out into the city.

“I loved the energy and vibe of the city, the people were warm and welcoming, the city was clean and pretty, and I had a blast,” he adds. “The food and beverage scene seemed to be up and coming, and I remember thinking that this would be a great place for a Carson Kitchen.”

Fast forward a couple of years, and he was discussing expansion with his business partners. They put together several lists of potential cities. The lists were based on demographics, revenue potential per square foot, overall economics, occupancy costs, tourist travel numbers, etc. Salt Lake City quickly rose to the top of every list. And as they say, the rest is history.
